Walnuts inshell keep reasonably well for at least nine months after harvesting. They keep much improved than walnut kernels (flesh) that have not been vacuum packed. The seed is a shrunken shell enclosing the edible kernel which is covered by a thin bitter-tasting sheath. Walnuts, in general, have a bitter nutty taste.
